Welcome to “What I Ate Wednesday” — a time where I usually tell you about all the times I forgot to take pictures of my food throughout the day. To make up for this, there have been Paint pictures. There have been recycled photos.  There have been no photos at all.

Not today, folks.

For the first time in what I think is WIAW history, I actually photographed all my food on the day that I actually ate it. Go figure.

Peas and Crayons

Breakfast — 5:45 AM

Breakfast keeps coming earlier.. and earlier.. and earlier. And I lied because this IS actually a recycled photo. But to be perfectly honest with you, I will probably be eating the same breakfast from now until December.

In the bowl:

  • 1 serving overnight oats
  • 1/2 cup pumpkin puree
  • 1/4 diced apple
  • cranberries
  • cinnamon
  • peanut butter

I also had a coffee with soy milk creamer — I can’t get off the ‘joe.

Lunch — 11:20 AM

I want to eat what I ate for lunch every single day for the rest of my life. I had a salad the size of my head — don’t be deceived by the picture. It was huge.

In the mix:

  • romaine lettuce
  • red onion
  • red pepper
  • slow roasted tomatoes
  • roasted buttercup squash chunks
  • baked tofu
  • balsamic
  • hummus
  • nutritional yeast

On the side I had a vanilla Chobani and an apple.

Snack — 3:45 PM

I wasn’t really hungry after school, but that has happened before and I haven’t eaten. By the time dinner rolled around, I was so hungry I could have eaten my arm off. Knowing that history, I knew it would be best to just eat my snack.

Dinner — 6:15 PM

A new soup! Roasted Potato Broccoli and White Bean Soup to be exact. And yes, you’ll be getting a recipe later today. I can’t spoil all the fun in just one post.

Snack — 8:00 pm

Since I started the day with pumpkin, it’s only right to end it with pumpkin as well.

Snack time featured a pumpkin protein muffin (recipe to come, I swear!), half of a microwaved cinnamon apple, a dollop of peanut butter, and some raisins.

And bedtime came not too long after that. Don’t judge.
