birthdays and burpees

Hi friends! I can’t thank you enough for all of the birthday wishes yesterday and Monday — it really meant a lot to me. Now that I’m 1/4 of a century, I feel much more mature and adult’ish (not really). I spent my day relaxing, vacuuming (the Husband delivered with the vacuum of my dreams!!!!!), and spending some time with my family. It was great.

Yesterday morning it was back to reality when my alarm clock went off at 5:00 AM. I wanted to squeeze in a short workout since I knew I wasn’t going to be going on a long walk with my boys during the day because we had a heat warning. I busted out Tina’s burpee blaster which I did a few weeks ago as one of my “first” workouts back, and almost died. I’m happy to report it was a little easier today! After, I cooled down a little bit, got ready for the day, and got breakfast going. I was starving all day today, so I was ready to eat!

Breakfast — 6:15 AM

I completely zoned out and forgot to take a picture of my breakfast this morning, but it looked a little something like this.

Hot oats (whyyyy!?) topped with some fruit, cinnamon, and peanut butter. While I was eating, a really nasty storm started to blow through. It was pitch black outside — it was scary! I forged ahead though and left on time to go hang out with the boys.

Lunch — 11:30 AM

We were all pretty hungry when lunch time came around, so I started on things a little earlier so we could be sitting down around 11:30 — the boys had some chicken nuggets and fruit (and even ate some of my baby carrots — it happened, Melanie!!), and I made myself an egg sandwich on a Udi’s bagel with avocado, hummus, and lettuce. It’s my favorite combination!

On the side I ate some baby carrots and Trader Joe’s triple layer hummus (so good!)

While I was eating, I came across a conjoined carrot!!!! It was the best thing ever. My six year old buddy told me I needed to save it so one of his toys could use it as a jetpack, but I vetoed that suggestion and ate it.

3:00 PM

In the midst of some intense Lego playtime this afternoon, I snacked on an old favorite, raisins and almonds.

When I got home, I also ate a cold piece of pizza that was leftover from the other night — I was feeling snacky while I was making dinner!


Dinner — 6:00 PM 

Dinner was courtesy of Trader Joe’s today — organic frozen brown rice (best convenience food ever), stir fry vegetables, and organic sprouted tofu (double the protein!).

This dinner was fairly similar to this recipe, and it was delicious. I went back for seconds on everything. Dinner is always ended with a piece of dark chocolate.

 
While I am typing this post, the day isn’t over yet, and I’m sure I’m going to head back into the kitchen for a snack at some point. I’m feeling granola or half a bagel with almond butter and banana slices!

All of your food looks delicious.. especially your dinner. Everytime I treat myself to one piece of dark chocolate, it is never a good enough “dessert” to hold me over throughout the night. I swear within an hour I’m back in the kitchen grabbing a banana or some cereal.

glad you had a good birthday!! I once got a carrot that looked like a lobster claw, i found it quite humorous! And I have to agree putting avocado on an egg sandwich is amazingly delicious!

I use to spread avocado on homemade biscuits and top with an egg, cheese, and fake bacon. I totally forgot about making these until I saw your sandwich. YUM!

I think avocado on any sandwich wins my heart. Your bagel looks mighty delicious too! I’ve never had a gluten free bagel but you might have encouraged me to!

Happy belated!! I thought of you when I was vaccumming this weekend with my moms friends vacuum and it was so fantastic haha.

That storm was nuts yesterday morning! I’m in Bolingbrook, and I was shocked… The wind was super fast, the rain drops were huge and blowing sideways, and the thunder had my poor dog hiding and shaking in the bathroom!

Yay on the new vacuum from the husband!
Great job on getting in your workout before the busy day!
Oh goodness, that’s scary about the storm. Glad its all good though. It will be a sad day when I have to bring back hot oats, or turn on my heater extra high and eat my cold oats beside it…most likely I’ll resort to the latter.

I usually end dinner with a piece of dark chocolate too…except tonight it was more like dark chocolate pieces in a small bowl of cereal with PB on top. One of those days!
